"Will my doctor know what blood test to ask for?" Your doctor might not know what are the best tests to ask for because some of the tests are quite new. It is a complex area and there is a lot of controversy. This is a major problem. Many doctors are not yet convinced that people can react to gluten other than getting coeliac disease. Many doctors are unaware that people with coeliac disease may not have any gut problems - they can suffer from symptoms such as low energy, depression, eczema and mood problems.
Oddly, the IgG-gliadin antibody test is not considered to be a useful test by most people medics. This is because doctors have only been looking for coeliac disease.
