"How common is gluten-sensitivity? Does gluten really affect so many people?"
I reply: Yes! Gluten-sensitivity is indeed very common. It occurs in about one-in-ten people - 10% of people (some say that it is even more common). However, coeliac disease is less common, occurring in about one-in-one-hundred people (that is 1% of people). Gluten-sensitivity has probably always been around but could not be easily diagnosed previously. The diagnosis has not been possible until the advent of the blood tests over the last ten years (the IgG-gliadin antibody test). The numbers: for every 100 people, one will have coeliac disease and ten will be gluten-sensitive. About a third of people who have ongoing poor health will be sensitive to gluten.
