“My 16-year old son has been told to avoid gluten. His main symptom has been abdominal pain. Is ok for him to eat bread made with spelt flour?” Nancy, Co, USA.
The short answer is “no!” A gluten-free diet cannot include spelt. Technically, spelt belongs to the wheat family. However, it has a slightly different chemical composition, and slightly lower gluten levels. Like wheat, spelt contains gliadin and glutenin proteins. When these proteins are wetted with water and combined mechanically during mixing, they produce gluten. The tummy pain that your son has is likely to be due to gluten. |
