The toxic part of the gluten molecule is a protein called "gliadin". Your immune system defends your body strongly against gliadin. It uses weapons called "antibodies" which repel the gliadin, in an attempt to remove it from your body. The outcome of your immune system’s fight against gliadin is that you start up the production of antibodies that are specifically targeted towards this gliadin: these are called anti-gliadin antibodies.
