You can see gluten-free stuff everywhere. An explosion of gluten free products is now available. But why? Because thousands upon thousands of people recognize that they are made sick by gluten. See this article in “The Washington Post”. It reports, “According to a study last year by MarketResearch.com, U.S. retail sales of gluten-free products have been growing at an annual rate of 27 percent since 2001. By 2010, gluten-free products are predicted to be a $1.7 billion industry, says MarketResearch.com's Larry Finkel.” Jodi Engelson, a senior research scientist at Cargill said: "There is clearly a market opportunity for gluten-free foods. For the patients who suffer, the diagnosis rate is increasing. In response to this, we have witnessed over a 100 per cent increase in gluten-free products over the last seven years."
