I have been in the USA giving some presentation on The Gluten Syndrome.  I ate at a lot of restaurants and cafes.  Most had only a sketchy idea about gluten-free foods.  Often, the staff was unaware of the word “gluten” and had no idea that it could cause a problem.

Many of the gluten-sensitive people who I talked to were not very confident about going out to eat – they did not trust the restaurant staff.   It seems that many places in the USA have a long way to go to understand these serious gluten issues.

1. Dining out in the US
Dr. Ford, you hit the nail on the head! While the awareness of CD and gluten is getting better, it's still leaves a lot to be desired. 
 
Dining out in the US is a risky event. Yes, sometimes we do get the "I have 3 heads" look when bring up the word gluten. It's no wonder why we don't eat out often.

2. Restaurant service
This is GOOD information. I am afraid to eat out and yet hear people say...."just tell the server..." I can't even get a glass of water without lemon, how the heck is the server or chef for that matter going to comprehend CD restrictions?? :roll
